They would not be great for dh. The Stroker Ace (4 piston) would give a huck full of modulation and power.. but not the others. One of the most appealing characteristics of this brake was that I could feel how much the pads where pushing onto the rotors. It was as if you were squeezing the pads with your fingers, but effortlessly. But as I've said, not good for DH. Good for DJ, street, park, perhaps, short races.

a 600 series derailleur will work with any shimano shifters. I run a Light Action Road derailleur (even before the 600 series) with a XT shifter and it works great

The only thing I could really say is put it on the side where it fits best. I would really have to see it to judge on what could be done though.
